Comment préparer Orange New York Cheesecake
- Preheat oven to 160°C (140°C fan/Gas Mark 3).
- Grease and flour a 24cm round springform pan. Line the base and sides with baking paper, extending the paper 4cm above the edge of the pan.
- Place the prepared pan on a baking tray.
- In a food processor, combine 250g digestive biscuits and 100g melted unsalted butter until it resembles fine breadcrumbs.
- Press the biscuit mixture firmly into the base of the prepared pan. Chill for 15 minutes.
- To make the filling, process 500g cream cheese, 150g caster sugar, and 100ml double cream in a food processor until smooth and creamy.
- Add 2 large eggs and the zest of 2 large oranges. Process until just combined. Do not overmix.
- Pour the filling over the chilled biscuit base.
- Bake for 45 minutes, or until the cheesecake is just set around the edges but still slightly wobbly in the center.
- Turn off the oven and leave the cheesecake to cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and let cool completely on a wire rack.
- Refrigerate overnight to allow the cheesecake to fully set and the flavors to meld.
