Comment préparer Strawberry Guava Jam

  1. In a heavy-bottomed saucepan, combine 1 cup guava paste, 2 cups sliced strawberries, 1/2 cup water, and 1 cup granulated sugar.
  2. Bring the mixture to a rolling boil over medium-high heat, stirring frequently to prevent sticking. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  3. In a small bowl, whisk together 2 tablespoons granulated sugar and 1 packet (1 1/4 teaspoons) of powdered pectin.
  4. Add the sugar-pectin mixture to the boiling guava-strawberry mixture. Stir vigorously for 1 minute.
  5. Continue to boil for another 2 minutes to fully activate the pectin, stirring constantly.
  6. Remove from heat and stir in 1 tablespoon finely grated lime zest.
  7. Use a potato masher or immersion blender to gently mash the jam to your desired consistency. For a chunkier jam, mash less.
  8. Carefully pour the hot jam into sterilized jars leaving 1/4 inch headspace.
  9. Wipe the rims of the jars clean and seal with lids.
  10. Process the filled jars in a boiling water bath for 10 minutes (for best shelf stability - optional).
  11. Let the jars cool completely. You should hear a 'pop' sound as the jars seal.
  12. Once completely cool, check the seals. Refrigerate any unprocessed jars and consume within 1 month.
  13. Chill for at least 2 hours before serving to allow the flavors to meld.
