How to Make Cheese And Crab Cups
- Preheat oven to 375°F (190°C).
- Spray a 24-cup mini muffin tin with cooking spray.
- Lightly dust a clean work surface with cornmeal.
- Unroll prepared pizza dough (or crescent roll dough) and gently press into an 18x12 inch rectangle. (If using crescent rolls, do not press, simply separate into 24 triangles)
- Cut the dough into 24 equal squares (or use 24 crescent roll triangles).
- Press one square (or triangle) firmly into each muffin cup to form a cup.
- In a medium bowl, combine: 1 cup cooked crabmeat, 1/4 cup finely chopped yellow onion, 1 tablespoon fresh dill, finely grated zest of 1 lemon, 2 tablespoons fresh lemon juice, 4 ounces of spreadable cream cheese, and 1/2 cup shredded cheddar cheese. Mix well.
- Spoon 1 tablespoon of the crabmeat mixture into each dough-lined cup.
- Bake for 15-18 minutes, or until the edges are golden brown.
- Sprinkle the tops with the remaining 1/4 cup of shredded cheddar cheese.
- Bake for another 2 minutes, or until the cheese is melted and bubbly.
- Let cool slightly in the muffin tin before carefully removing the cups.
- Serve warm or cold. Enjoy!
