How to Make Jewel Cookies

  1. Cream together 1 cup (2 sticks) softened butter, ¾ cup packed light brown sugar, 1 large egg yolk, and 1 teaspoon vanilla extract until light and fluffy.
  2. Gradually stir in 2 ½ cups all-purpose flour until just combined.
  3. Cover the dough and refrigerate for at least 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. Roll the chilled dough into 1-inch balls. Dip each ball in 1 large egg white, lightly beaten.
  6. Roll the egg-white coated balls in ½ cup chopped nuts (walnuts, pecans, or a mix!).
  7. Using a floured thimble or your thumb, gently press a small indentation into the center of each cookie.
  8. Bake for 10-12 minutes, or until the edges are delicately golden brown.
  9. Let the cookies cool on a wire rack.
  10. Once cooled, fill the center of each cookie with ½ teaspoon of raspberry jam (or your favorite jam).
