How to Make Mango Jam

  1. Prepare jars and lids by sterilizing them in boiling water for 10 minutes. Set aside.
  2. Peel and dice 4 ripe mangoes into approximately 1-inch pieces.
  3. Measure 4 cups of diced mangoes and place them in a large, heavy-bottomed saucepan. Add 4 cups of granulated sugar.
  4. Add the juice of 1 lemon and the zest of 1/2 lemon.
  5. Add 1/4 - 1/2 cup of water to prevent sticking. Stir to combine.
  6. Bring the mixture to a boil over medium heat, then reduce heat to a simmer. Cook for 20-25 minutes, or until the mangoes are very soft and easily mashed.
  7. Use an immersion blender to puree the jam until smooth, or carefully transfer the mixture in batches to a regular blender and blend until smooth. Be cautious when blending hot liquids!
  8. Return the pureed jam to the saucepan and continue to simmer over medium-low heat for another 15-20 minutes, or until the jam has thickened to your desired consistency. The jam should sheet off a spoon (when a small amount is drizzled from a spoon, it should leave a clear trail).
  9. Carefully ladle the hot jam into the sterilized jars, leaving 1/4 inch of headspace. Wipe the rims clean, and seal with lids and rings. Process in a boiling water bath for 10 minutes to ensure safe storage (optional, but recommended for long-term storage).
