How to Make Merry Cherry Fudge

  1. Lightly grease an 8x8 inch baking pan with cooking spray and set aside.
  2. Thoroughly drain the maraschino cherries and gently blot them dry with paper towels. Set aside.
  3. In a heavy-bottomed saucepan, combine the semi-sweet and milk chocolate chips.
  4. Place the saucepan over very low heat. Stir constantly until the chocolate is completely melted and smooth.
  5. Remove the saucepan from the heat. Stir in the sweetened condensed milk and cherry juice until well combined.
  6. Gently fold in the chopped pecans.
  7. Pour the chocolate mixture into the prepared pan and spread evenly.
  8. Immediately press the drained maraschino cherries into the fudge, ensuring the top of each cherry and stem remain exposed.
  9. Cover the pan and refrigerate for at least 2 hours, or until the fudge is firm.
  10. Once firm, cut the fudge into 36 squares.
  11. Store the fudge in an airtight container in the refrigerator.
