How to Make Overnight Cookies

  1. Preheat oven to 350°F (175°C).
  2. In a clean, grease-free bowl, beat 4 large egg whites until frothy.
  3. Add 1/4 teaspoon of salt and 1/2 teaspoon of cream of tartar. Beat until stiff peaks form, but avoid over-beating.
  4. Gradually add 1 cup of granulated sugar, beating constantly until the mixture is very shiny and stiff peaks form.
  5. Stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract.
  6. Gently fold in 1/2 cup of chopped pecans and 1 cup of chocolate chips.
  7. Drop rounded teaspoons of batter onto greased baking sheets.
  8. Place the baking sheets in the preheated oven. Immediately turn off the oven and leave overnight (at least 8 hours).
  9. Do not open the oven door during the overnight baking process.
  10. Carefully remove cookies from the oven in the morning. Store in an airtight container for up to 3 days.
