How to Make Sue's Coffee Cake

  1. Preheat oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
  2. Cream together 1 cup Crisco shortening and 1 ½ cups granulated sugar until light and fluffy.
  3. In a separate bowl, whisk together 2 ½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Pour batter into the prepared pan and sprinkle evenly with ½ cup cinnamon sugar (mix 2 tablespoons cinnamon with ¼ cup sugar).
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from oven and immediately spread with 2 tablespoons of melted butter. While still warm, sprinkle generously with additional cinnamon sugar.
