How to Make Sweet Cherry Pie

  1. Preheat oven to 425°F (220°C).
  2. Roll out one disc of pie crust and carefully line a 9-inch pie plate. Trim and crimp the edges.
  3. In a large bowl, gently mix together 4 cups pitted sweet cherries, 1 cup granulated sugar, 1/4 cup tapioca starch, and 1 tablespoon lemon juice.
  4. Pour the cherry mixture into the prepared pie crust.
  5. Roll out the second disc of pie crust and place it over the filling. Trim and crimp the edges to seal. Cut several slits in the top crust to allow steam to escape.
  6. Bake for 10 minutes at 425°F (220°C).
  7. Reduce oven temperature to 350°F (175°C) and continue baking for 30-40 minutes, or until the crust is golden brown and the filling is bubbly. If the crust begins to brown too quickly, cover the edges with aluminum foil.
  8. Let the pie cool completely on a wire rack before serving. Enjoy!
