- Preheat oven to 325°F (160°C).
- Crush 20 Oreo cookies (or similar chocolate sandwich cookies) into fine crumbs using a food processor.
- Add 6 tablespoons (3 ounces) of melted unsalted butter to the cookie crumbs and process until thoroughly combined.
- Press the crumb mixture into the bottom and about 1 inch up the sides of a 9-inch springform pan.
- In a large bowl, beat 3 (8-ounce) packages of cream cheese and 1 ¾ cups granulated sugar with an electric mixer on medium speed until smooth and creamy (about 2 minutes).
- Beat in 4 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
- In a separate bowl, whip 2 cups heavy cream until soft peaks form. Gently fold in 1 cup of the whipped cream into the cream cheese mixture.
- Chop 12-16 Snickers bars into small pieces.
- Fold 1 ½ cups of the chopped Snickers into the cream cheese mixture.
- Gently pour the cream cheese mixture into the prepared crust.
- Place the springform pan in a larger baking pan and pour enough hot water into the larger pan to come halfway up the sides of the springform pan (this creates a water bath for even baking).
- Bake for 1 hour and 15 minutes, or until the cheesecake is almost set. The center may still jiggle slightly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove the cheesecake from the oven and let it cool completely to room temperature.
- Sprinkle the remaining chopped Snickers over the top of the cheesecake.
- Refrigerate for at least 4-5 hours, or preferably overnight, before serving.
- Run a thin knife around the edge of the pan to loosen the cheesecake before removing the springform sides.
- Just before serving, drizzle with your favorite chocolate fudge sauce and top with a dollop of whipped cream (remaining 1 cup).
