- Preheat oven to 375°F (190°C).
- In a large bowl, cream together 1 cup (2 sticks) unsalted butter and ¾ cup granulated sugar using an electric mixer on high speed for 4 minutes, until light and fluffy.
- Beat in 1 teaspoon vanilla extract and ¼ teaspoon salt.
- Gradually add 2 cups all-purpose flour, mixing until just combined. The dough will be crumbly.

- Cover the bowl and refrigerate the dough for 45 minutes.
- Pinch off approximately 1 tablespoon of dough for each cookie.

- Unwrap one Hershey's Kiss and place it in the center of each flattened dough circle.
- Gently bring the edges of the dough up and over the kiss, completely enclosing it. Pinch the edges to seal.
