Zubereitung von Johnny Jalapeno's Cowboy Candy
- Wash and dry 2 pounds of jalapeños. Remove the stems.
- If making 'Cowgirl Candy', carefully slice the jalapeños in half lengthwise and remove the seeds and membranes. For a spicier version, leave some or all of the seeds in.
- Finely chop the jalapeños (about 1/2 inch dice).
- In a large saucepan, combine the chopped jalapeños with 1 ½ cups of granulated sugar, ¾ cup apple cider vinegar, 2 tablespoons of yellow mustard seeds, 1 tablespoon of celery seeds, 1 teaspoon of ground cumin, ½ teaspoon of turmeric powder, and ¼ teaspoon of cayenne pepper (optional, for extra heat).
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 25-30 minutes, stirring occasionally, until the jalapeños are tender and the mixture has thickened slightly.
- Remove from heat and let cool completely.
- Taste and adjust seasoning as needed, adding more sugar for sweetness or vinegar for tang.
- Once cool, transfer to sterilized jars for canning (if desired) or store in airtight containers in the refrigerator for up to 2 weeks.
