- Preheat oven to 220°C (450°F). Rinse and pat dry 500g large button mushrooms. Remove stalks and place mushrooms upside down on a baking tray or ovenproof dish.
- Season mushrooms with salt and pepper. Dot each mushroom cap with softened butter (approx. 1/2 tbsp total). Bake for 10-15 minutes until slightly softened.
- While mushrooms are baking, fry 100g diced bacon and 1 medium finely chopped onion in a pan until the bacon is crispy and the onion is translucent.
- Stir in 200g cottage cheese into the bacon and onion mixture. Season to taste with salt and pepper.
- Spread a small amount of butter on each of the 4 slices of buttered toast. Place a baked mushroom cap, gills up, on each slice of toast.
- Mound the bacon and cottage cheese mixture generously into each mushroom cap.
- Sprinkle 50g of grated cheddar cheese over each mushroom filling. Dust lightly with a pinch of cayenne pepper or paprika.
- Place the tray under a preheated grill until the cheese is golden brown and bubbly (approximately 3-5 minutes).
- Serve immediately, optionally with a side salad.
