  4. Bring to a full rolling boil over high heat, stirring constantly.
  5. Once boiling, boil hard for 1 full minute, stirring constantly.
  6. Reduce heat to medium and add 1/2 teaspoon butter (optional) to reduce foaming.
  7. Remove from heat and let the mixture stand for 5 minutes to prevent separation.
  8. Ladle the hot jam into the hot, sterilized jars, leaving 1/4 inch headspace.
  9. Remove air bubbles by running a knife or thin spatula around the inside of each jar.
  10. Wipe jar rims clean with a damp paper towel.
  11. Place lids and rings on jars and tighten fingertip tight.
  12. Process in a boiling water bath for 10 minutes.
  13. Remove jars and let cool completely on a towel-lined surface. You should hear a ‘pop’ as the jars seal.
  14. Let cool overnight. Check seals – jars should be sucked down. Store in a cool, dark place.
