Cómo preparar Acorn Squash Stuffed With Sausage And Sour Cream

  1. Preheat oven to 400°F (200°C).
  2. Halve 2 medium acorn squash, scoop out seeds and stringy bits. Brush cut sides with 1 tablespoon olive oil and place cut-side down on a baking sheet. Bake for 45-55 minutes, or until tender when pierced with a fork.
  3. While squash is baking, prepare the sausage filling. In a large skillet, brown 1 pound Italian sausage (removed from casings) over medium heat, breaking it up with a spoon. Add 1 medium onion, chopped, and 8 ounces cremini mushrooms, sliced. Cook until onion is softened and mushrooms are tender, about 8-10 minutes.
  4. Stir in 1/2 cup sour cream and season with salt and pepper to taste. Remove from heat.
  5. Once squash has cooled slightly, carefully remove from oven and flip cut-side up.
  6. Fill each squash half generously with the sausage mixture.
  7. Place stuffed squash halves in a baking dish. Add 1/4 cup chicken broth to the bottom of the dish.
  8. Return to the oven and bake for 20 minutes at 350°F (175°C), or until heated through and bubbly.
  9. Garnish with fresh parsley (optional) and serve immediately.
