Cómo preparar Baked Penne With Corn Zucchini And Basil

  1. Preheat oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil. Add 1 pound penne pasta and cook until al dente, about 8 minutes. Drain and rinse with cold water; set aside.
  3. Heat 3 tablespoons olive oil in a 12-inch nonstick skillet over medium-high heat. Add 2 cups fresh corn kernels and season with salt and pepper. Cook until lightly golden, 6-8 minutes. Transfer to a large bowl; set aside.
  4. Add the remaining 3 tablespoons olive oil to the skillet. Add 2 medium zucchini, diced, and season with salt. Cook until tender and golden brown, 6-8 minutes, working in batches and adding more oil as needed. Add to the bowl with the corn.
  5. Reduce heat to medium-low. Add 1 medium onion, chopped, 1 teaspoon salt, and black pepper to taste. Cook until translucent, about 2 minutes.
  6. Stir in 1 (28-ounce) can crushed tomatoes, 2 cloves garlic, minced, 1 teaspoon dried oregano, and ½ teaspoon red pepper flakes. Cook until tomatoes soften and form a sauce, about 5 minutes.
  7. Stir in 2 tablespoons tomato paste and cook for 1 minute. Add ½ cup dry white wine and cook until reduced and thickened, about 3 minutes.
  8. Add the cooked pasta, tomato sauce, ½ cup fresh basil leaves (chopped), 8 ounces fresh mozzarella cheese (shredded), and ½ cup grated Parmesan cheese to the bowl with the vegetables. Stir to combine.
  9. Transfer the pasta mixture to the skillet. Sprinkle the remaining ½ cup Parmesan cheese on top.
  10. Bake in the preheated oven until golden brown and bubbly, 20-25 minutes.
  11. Serve warm and enjoy!
