  3. Drain the lime mixture thoroughly and rinse well. Mix with 1/2 cup raisins and 1/2 cup sultanas.
  4. Process the lime mixture in batches in a food processor until coarsely chopped. Do not puree.
  5. Heat 3 tablespoons of peanut oil in a large, heavy-based pan over medium heat. Add 1 teaspoon cumin seeds, 1 teaspoon coriander seeds, 1 teaspoon mustard seeds, 1/2 teaspoon chili powder, 1/4 teaspoon black pepper, 2 cloves minced garlic, and 1 tablespoon grated fresh ginger.
  6. Cook for 2-3 minutes, or until fragrant.
  7. Add the chopped lime mixture, 1/2 cup white vinegar, and 1 cup packed soft brown sugar to the pan.
