Comment préparer Ultra Choc Chip Cake
- Preheat oven to 180°C (160°C fan/Gas Mark 4).
- Grease and flour a deep 20cm round cake tin.
- In a large bowl, cream together 200g softened butter and 200g caster sugar until light and fluffy.
- Add 2 tbsp instant coffee powder and beat until combined.
- Gradually beat in 4 large eggs, one at a time, then stir in 1 tsp vanilla extract.
- In a separate bowl, sift together 200g self-raising flour, 50g cocoa powder, and 1 tsp baking soda.
- Gently fold the dry ingredients into the wet ingredients, alternating with 150ml buttermilk, until just combined. Do not overmix.
- Stir in 200g chocolate chips.
- Pour batter into the prepared tin and smooth the top.
- Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
- Let the cake cool in the tin for 30 minutes before inverting it onto a wire rack to cool completely.
- For the icing: Melt 100g butter and 200g dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth and glossy.
- Let the icing cool slightly before spreading evenly over the cooled cake.
- Decorate with chocolate zig-zags (optional – see instructions below).
- To make chocolate zig-zags: Melt 100g chocolate melts in a heatproof bowl over simmering water. Transfer to a piping bag fitted with a small nozzle, and pipe zig-zag patterns onto baking paper. Refrigerate until set, then carefully lift off with a knife.
