Como fazer Yummy Yummy Cake
- Preheat oven to 350°F (175°C). Place a rack in the center of the oven.
- Grease and flour two 9-inch round cake pans. (Flour can be omitted if using parchment paper rounds)
- In a large bowl, combine cake mix, 1 (11 ounce) can mandarin oranges (drained, reserving juice), 1/2 cup (1 stick) melted unsalted butter, 1/4 cup vegetable oil, and 3 large eggs.
- Beat with an electric mixer on low speed for 1 minute, then scrape down the sides of the bowl.
- Beat on medium speed for 2-3 minutes, or until well combined.
- Divide batter evenly between the prepared cake pans.
- Bake for 24-27 minutes, or until a wooden skewer inserted into the center comes out clean and the cake springs back when lightly touched.
- Let cakes cool in pans for 10 minutes before inverting onto wire racks to cool completely.
- While cakes are cooling, prepare the frosting (see below).
- Once cakes are completely cool, poke holes all over the top of each layer using a wooden skewer.
- Drizzle the reserved mandarin orange juice and 1/2 cup of pineapple juice evenly over both layers.
- Place one cake layer on a serving plate, frost the top, and add the second layer.
- Frost the entire cake.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
