How to Make Almond Joy Brownie Bites

  1. Preheat oven to 350°F (175°C). Generously spray two mini muffin tins with nonstick cooking spray.
  2. Prepare your favorite brownie batter (see notes for recipe suggestions). Fill each mini muffin cup about halfway full.
  3. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  4. Let the brownie bites cool completely in the muffin tins before removing.
  5. In a medium bowl, combine 1 cup sweetened shredded coconut and 1/2 cup sweetened condensed milk. Mix well.
  6. Roll the coconut mixture into 24 small balls (approximately 1 inch in diameter).
  7. Press one coconut ball onto the top of each cooled brownie bite.
  8. Press a whole almond into the center of each coconut ball.
  9. Freeze the brownie bites for 15 minutes to firm up the coconut topping.
  10. Melt 8 ounces of almond bark or white chocolate melts according to package directions.
  11. Remove brownie bites from the freezer and dip the tops into the melted chocolate.
  12. Place the dipped brownie bites on a wax paper-lined baking sheet and refrigerate for at least 15 minutes, or until the chocolate is set.
