  • 1 teaspoon ground cinnamon
  • ½ cup sour cream

How to Make Banana Pear Bread With Dates

  1. Preheat oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans.
  2. In a large bowl, cream together 1 cup (2 sticks) softened unsalted butter, 1 ½ cups granulated sugar, ½ cup Splenda (or other granulated sugar substitute), 2 teaspoons vanilla extract, 1 teaspoon orange extract, and 2 large eggs until light and fluffy.
  3. In a blender, combine 2 ripe peeled bananas and 1 cup (about ½ a 15 ounce can) of drained pear slices.
  4. Blend until smooth. Stop the blender, add 1 teaspoon ground cinnamon and enough additional pear slices to reach 2 cups of total puree.
  5. Blend again until completely smooth.
  6. In a separate bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  7. Gradually add the dry ingredients to the creamed butter mixture, mixing on low speed until just combined.
  8. Stir in the pear-banana puree and ½ cup sour cream until well incorporated.
  9. Fold in 1 cup chopped pitted dates.
  10. Divide the batter evenly between the prepared loaf pans.
  11. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If necessary, continue baking in 10-minute increments until done.
