Ingredients for Baked Apples With Apricots And Cashews

  • Granny Smith Apples
  • 1/2 cup applesauce
  • Dark Raisin
  • Dried Apricot
  • 1/2 cup cashews (roughly chopped)
  • 1/3 cup granulated sugar + 2 tablespoons granulated sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground cinnamon + 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter (divided)
  • enough white wine to reach 1/2 inch depth in the baking dish

How to Make Baked Apples With Apricots And Cashews

  1. Preheat oven to 375°F (190°C).
  2. Partially peel 8 medium apples (about 2 inches diameter), leaving the bottom half intact.
  3. Remove the core from each apple using a melon baller or small knife.
  4. If necessary, cut a thin slice from the bottom of each apple to create a stable base.
  5. Place the prepared apples in a baking dish.
  6. Peel and dice 1 medium apple into 1/2-inch pieces.
  7. In a medium bowl, combine the diced apple, 1/2 cup applesauce, 1/4 cup raisins, 1/2 cup dried apricots (chopped), 1/2 cup cashews (roughly chopped), 1/3 cup granulated sugar, 2 tablespoons lemon juice, and 1/4 teaspoon ground cinnamon. Toss gently to combine.
  8. In a small bowl, combine 2 tablespoons granulated sugar and 1/4 teaspoon ground cinnamon.
  9. Fill each prepared apple with the apricot-cashew mixture.
  10. Place 1/2 teaspoon of butter on top of each apple.
  11. Sprinkle each apple generously with the cinnamon-sugar mixture.
  12. Pour 1/2 inch of white wine into the baking dish.
  13. Bake for 50-60 minutes, or until the apples are tender, basting occasionally with the pan juices. Add 1-2 tablespoons of water if the apples appear dry.
  14. Serve warm or at room temperature. Enjoy!

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
