How to Make Barbados Roast Chicken
- Preheat oven to 450°F (232°C).
- Rinse the chicken inside and out and pat it dry with paper towels.
- Rub the chicken generously with the juice of 1 lemon. Place lemon halves inside the chicken cavity.
- Season the chicken generously with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- In a small bowl, combine 4 tablespoons of softened butter, 1 tablespoon of finely chopped red bell pepper, 2 cloves of minced garlic, and 1 teaspoon of ground coriander.
- Smear the butter mixture evenly all over the chicken, ensuring it gets under the skin as well.
- Roast the chicken for 15 minutes at 450°F (232°C).
- Reduce oven temperature to 375°F (190°C) and continue roasting for approximately 1 to 1 1/2 hours, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C) and the juices run clear.
