How to Make Awesome Turtle Pie
- Preheat oven to 350°F (175°C). Toast 1 cup of pecans on a baking sheet for 5-7 minutes, or until fragrant. Let cool completely.
- Coarsely chop half of the toasted pecans and set aside. Reserve the remaining pecans for garnish.
- Melt 1 cup of semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth. Set aside.
- Pour 2/3 of the melted chocolate into the pie crust and spread evenly with a spoon. Refrigerate for 10 minutes to set slightly.
- Sprinkle the coarsely chopped pecans over the chocolate layer.
- In a large bowl, beat the softened cream cheese until smooth. Stir in the vanilla extract and marshmallow creme until well combined.
- Gently fold in the thawed Cool Whip until just combined.
- Gradually fold in 2/3 of the caramel sauce until lightly swirled throughout the mixture.
- Pour the cream cheese mixture into the prepared pie crust over the pecan layer.
- Drizzle the remaining caramel sauce and melted chocolate over the top.
- Sprinkle with the remaining whole pecans.
- Refrigerate for at least 4 hours, or preferably overnight, before serving.
