How to Make Chocolate Afghans

  1. Preheat your oven to 180°C (350°F). Line baking trays with baking paper.
  2. In a large bowl, cream together 125g softened butter and 175g caster sugar until light and fluffy.
  3. Crush 10 Weet-Bix biscuits into fine crumbs using a food processor or rolling pin. (Alternatively, you can use a ziploc bag and rolling pin)
  4. Add the crushed Weet-Bix, 2 tablespoons cocoa powder, and 1 teaspoon baking powder to the creamed butter and sugar mixture. Mix until just combined.
  5. Roll rounded teaspoons of the mixture into balls and place them onto the prepared baking trays, slightly flattening each ball with a fork.
  6. Bake for 12-15 minutes, or until the edges are lightly golden brown.
  7. Remove from oven and let the biscuits cool completely on the baking trays before icing.
  8. Once cool, ice with your favourite chocolate icing (recipe suggestions can be found online). Enjoy!
