How to Make Chocolate Afghans
- Preheat your oven to 180°C (350°F). Line baking trays with baking paper.
- In a large bowl, cream together 125g softened butter and 175g caster sugar until light and fluffy.
- Crush 10 Weet-Bix biscuits into fine crumbs using a food processor or rolling pin. (Alternatively, you can use a ziploc bag and rolling pin)
- Add the crushed Weet-Bix, 2 tablespoons cocoa powder, and 1 teaspoon baking powder to the creamed butter and sugar mixture. Mix until just combined.
- Roll rounded teaspoons of the mixture into balls and place them onto the prepared baking trays, slightly flattening each ball with a fork.
- Bake for 12-15 minutes, or until the edges are lightly golden brown.
- Remove from oven and let the biscuits cool completely on the baking trays before icing.
- Once cool, ice with your favourite chocolate icing (recipe suggestions can be found online). Enjoy!
