How to Make Cocoa Almonds

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine 1 cup of almonds, 2 tablespoons of melted coconut oil, 1/4 cup of maple syrup, and 1/2 teaspoon of vanilla extract. Stir until the almonds are evenly coated.
  3. Spread the almond mixture in a single layer on a baking sheet.
  4. Bake for 15 minutes, stirring halfway through, until golden brown and fragrant.
  5. Remove from oven and let cool slightly.
  6. Once slightly cooled, add 1/4 cup unsweetened cocoa powder to the bowl with the almonds. Toss gently until all almonds are evenly coated with cocoa.
  7. Let cool completely before serving. Store in an airtight container at room temperature for up to a week.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
