How to Make Crystal Almonds

  1. Preheat oven to 350°F (175°C).
  2. Spread 1 cup of California almonds in a single layer on a shallow baking sheet.
  3. Roast for 12-20 minutes, stirring occasionally, until golden brown and fragrant.
  4. In a medium saucepan over medium heat, combine 1/2 cup honey and 2 tablespoons butter.
  5. Bring to a boil, then reduce heat to medium-low and simmer for 2 minutes, stirring constantly.
  6. Add the roasted almonds to the honey-butter mixture.
  7. Simmer and stir for 2 minutes, ensuring all almonds are evenly coated.
  8. Line a baking sheet with parchment paper.
  9. Using a slotted spoon, transfer the almonds to the prepared baking sheet. Spread them in a single layer to prevent sticking.
  10. Let cool slightly.
  11. While still slightly warm, toss the almonds with 1/4 cup turbinado sugar until evenly coated.
  12. Let cool completely before storing in an airtight container.
