How to Make Easy Watermelon Jelly
- Combine watermelon and water in a large saucepan. Bring to a boil over medium-high heat.
- Reduce heat and simmer for 10 minutes, stirring occasionally, until watermelon is softened.
- Remove from heat and let cool slightly. Pour mixture through a fine-mesh sieve or cheesecloth lined strainer, pressing on the solids to extract as much juice as possible. You should have about 4 cups of watermelon juice.
- Return the watermelon juice to the saucepan. Add the sugar and powdered pectin. Stir well to combine.
- Bring to a rolling boil over high heat, stirring constantly. Boil hard for 1 minute, stirring constantly.
- Remove from heat and stir in the lemon juice.
- Ladle the hot jelly into sterilized half-pint canning jars, leaving 1/4-inch headspace.
- Wipe the rims of the jars clean, place lids and bands on tightly, and process in a boiling water bath for 10 minutes.
- Remove jars from canner and let cool completely. Check seals; jars should pop and make a ‘thunk’ sound indicating a good seal.
- Let the jelly cool and set completely before storing. Enjoy your homemade watermelon jelly!
