How to Make Gluten Free Animal Cookies

  1. Preheat oven to 190°C (375°F). Line baking trays with non-stick baking paper.
  2. In a large bowl, whisk together 150g arrowroot powder, 100g gluten-free plain flour blend (e.g., Coles Gluten Free Plain Flour), and 2 tsp baking powder. Set aside.
  3. In a separate bowl, cream together 125g dairy-free margarine (e.g., Meadow Lea Dairy Free Spread), 100g caster sugar, and 1 tsp vanilla extract until light and fluffy.
  4. In a small bowl, whisk together 1 tsp baking powder, 50ml sunflower oil, and 50ml water. Gradually add this mixture to the creamed margarine mixture, beating until combined.
  5. Gradually add the dry ingredients (from step 2) to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently bring the dough together into a ball. Divide the dough into four equal quarters.
  7. On a lightly floured surface, roll out one quarter of the dough to about 5mm thickness. Use cookie cutters to cut out animal shapes.
  8. Carefully transfer the cut-out cookies onto the prepared baking trays.
  9. Bake for 8-10 minutes, or until the edges are lightly golden brown. Rotate trays halfway through baking for even cooking.
  10. Remove from oven and let the cookies cool on the baking trays for a few minutes before transferring to a wire rack to cool completely.
  11. Decorate with your favourite icing or enjoy plain! Makes approximately 30 cookies.
