How to Make Gluten Free Animal Cookies
- Preheat oven to 190°C (375°F). Line baking trays with non-stick baking paper.
- In a large bowl, whisk together 150g arrowroot powder, 100g gluten-free plain flour blend (e.g., Coles Gluten Free Plain Flour), and 2 tsp baking powder. Set aside.
- In a separate bowl, cream together 125g dairy-free margarine (e.g., Meadow Lea Dairy Free Spread), 100g caster sugar, and 1 tsp vanilla extract until light and fluffy.
- In a small bowl, whisk together 1 tsp baking powder, 50ml sunflower oil, and 50ml water. Gradually add this mixture to the creamed margarine mixture, beating until combined.
- Gradually add the dry ingredients (from step 2) to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently bring the dough together into a ball. Divide the dough into four equal quarters.
- On a lightly floured surface, roll out one quarter of the dough to about 5mm thickness. Use cookie cutters to cut out animal shapes.
- Carefully transfer the cut-out cookies onto the prepared baking trays.
- Bake for 8-10 minutes, or until the edges are lightly golden brown. Rotate trays halfway through baking for even cooking.
- Remove from oven and let the cookies cool on the baking trays for a few minutes before transferring to a wire rack to cool completely.
- Decorate with your favourite icing or enjoy plain! Makes approximately 30 cookies.
