How to Make Grapefruit Curd

  1. Combine 1/2 cup (113g) unsalted butter and 1 cup (200g) granulated sugar in the top of a double boiler set over simmering water. Whisk constantly until the butter is melted and the sugar is completely dissolved.
  2. In a separate bowl, whisk together 4 large egg yolks. Gradually whisk the egg yolks into the butter-sugar mixture. Add the zest and juice of 2 large grapefruits (about 1 cup juice). Continue whisking constantly until the mixture thickens significantly and coats the back of a spoon (about 10-15 minutes).
  3. Remove from heat immediately. Strain the curd through a fine-mesh sieve into a heatproof bowl to remove any lumps or zest bits.
  4. Spoon the curd into a warm, sterilized jar, leaving about 1/2 inch of headspace. Seal tightly.
  5. Allow to cool completely before refrigerating. Store in the refrigerator for up to 1 month.
