How to Make Grasshopper Parfaits

  1. Preheat oven to 350°F (175°C). Crush 1 ½ cups of chocolate sandwich cookies into fine crumbs. (Alternatively, use 1 ½ cups of chocolate wafer cookies)
  2. Finely chop 1 cup of Andes® mint patties or similar mint chocolate candies.
  3. In a small bowl, combine the crushed cookies and chopped mint candies. Set aside.
  4. In a medium bowl, whisk together 2 cups of cold milk and two (4-serving size) packages of instant chocolate pudding mix for 2 minutes until smooth.
  5. Let the pudding stand for 5 minutes to thicken.
  6. While the pudding thickens, in a separate bowl, beat 1 cup of heavy cream with 2 tablespoons of green food coloring until stiff peaks form.
  7. Divide the chocolate pudding evenly among 12 parfait glasses or dessert dishes.
  8. Top each layer of pudding with half of the cookie-mint mixture.
  9. Add a dollop of the green whipped cream on top of the cookie-mint layer.
  10. Repeat layers: pudding, cookie-mint mixture, and whipped cream.
  11. Refrigerate for at least 30 minutes to allow the flavors to meld and the parfait to chill completely before serving.
  12. Store leftover parfaits in the refrigerator.
