How to Make Lemon Delicious

  1. Preheat oven to 180°C (350°F).
  2. Grease six 1-cup capacity ovenproof ramekins.
  3. In a large bowl, whisk together the softened butter, lemon zest, lemon juice, sugar, flour, milk, and egg yolks until smooth and well combined.
  4. In a clean, grease-free bowl, using an electric mixer, beat the egg whites on high speed until stiff peaks form.
  5. Gently fold 1/4 of the egg white mixture into the lemon mixture to lighten it.
  6. Gently fold in the remaining egg whites until just combined. Be careful not to overmix.
  7. Spoon the mixture evenly into the prepared ramekins.
  8. Place the ramekins in a larger baking dish. Carefully pour boiling water into the baking dish until it comes halfway up the sides of the ramekins (bain-marie).
  9. Bake for 25-30 minutes, or until the custards are golden brown and set in the center. A slight jiggle is okay.
  10. Let the custards cool slightly in the water bath before carefully removing them. Dust with icing sugar before serving.
