How to Make Lemon Delicious
- Preheat oven to 180°C (350°F).
- Grease six 1-cup capacity ovenproof ramekins.
- In a large bowl, whisk together the softened butter, lemon zest, lemon juice, sugar, flour, milk, and egg yolks until smooth and well combined.
- In a clean, grease-free bowl, using an electric mixer, beat the egg whites on high speed until stiff peaks form.
- Gently fold 1/4 of the egg white mixture into the lemon mixture to lighten it.
- Gently fold in the remaining egg whites until just combined. Be careful not to overmix.
- Spoon the mixture evenly into the prepared ramekins.
- Place the ramekins in a larger baking dish. Carefully pour boiling water into the baking dish until it comes halfway up the sides of the ramekins (bain-marie).
- Bake for 25-30 minutes, or until the custards are golden brown and set in the center. A slight jiggle is okay.
- Let the custards cool slightly in the water bath before carefully removing them. Dust with icing sugar before serving.
