How to Make Lollipops

  1. In a medium saucepan, combine 1 cup granulated sugar, 1/2 teaspoon cream of tartar, and 1/2 cup water.
  2. Stir the mixture constantly over medium heat until the sugar is completely dissolved.
  3. Increase the heat to medium-high and clip a candy thermometer to the side of the pan. Boil the mixture, without stirring, until it reaches 290°F (hard-crack stage) on a candy thermometer.
  4. Carefully remove the pan from the heat. Add your desired flavoring (e.g., 1 teaspoon peppermint extract, 1/2 teaspoon vanilla extract) and food coloring.
  5. Test the candy by dropping a small amount into a glass of ice water. If it immediately forms a hard ball that shatters when you tap it, it's ready.
  6. Quickly pour the hot candy mixture into well-greased lollipop molds.
  7. While the candy is still partially soft (but not too hot!), insert wooden lollipop sticks into the center of each lollipop.
  8. Allow the lollipops to cool completely and harden completely (at least 2 hours) before removing them from the molds.
