How to Make Almond Butter Blossoms

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, cream together 1 cup (2 sticks) of softened butter and 1/2 cup of almond butter using an electric mixer on medium-high speed for 30 seconds.
  3. Add 1/2 cup granulated sugar, 1/2 cup packed brown sugar, 1 teaspoon baking soda, 1/2 teaspoon cream of tartar, and 1/4 teaspoon salt.
  4. Beat until well combined, scraping down the sides of the bowl as needed.
  5. Beat in 1 large egg, 1 teaspoon vanilla extract, and 1/4 cup milk until thoroughly combined.
  6. Gradually add 1 1/2 cups whole wheat flour and as much of the 1 1/2 cups all-purpose flour as you can using the mixer.
  7. Stir in any remaining all-purpose flour by hand until just combined. Be careful not to overmix.
  8. In a shallow dish, combine 3 tablespoons granulated sugar and 1/4 cup finely chopped almonds.
  9. Roll the dough into 1-inch balls.
  10. Roll each ball in the sugar-almond mixture to coat evenly.
  11. Place balls 2 inches apart on ungreased baking sheets.
  12. Bake for 8-10 minutes, or until the edges are lightly golden brown and the tops are cracked.
  13. Remove from oven and immediately press a chocolate kiss into the center of each cookie.
  14. Transfer cookies to a wire rack to cool completely.
