How to Make Marshmallow Sandwich Cookies
- Preheat oven to 375°F (190°C).
- On a lightly floured surface, roll out cookie dough to 1/4 inch thickness. Use cookie cutters to create your desired shapes.
- Place cookies onto ungreased baking sheets. Bake for 7-9 minutes, or until edges are lightly golden brown.
- Remove from oven and let cool completely on a wire rack.
- Ensure you have an even number of cooled cookies.
- Place half of the cookies, bottom-side up, on a microwave-safe plate.
- Top each cookie with one marshmallow.
- Microwave for 10-15 seconds, or until marshmallows are puffed and slightly gooey. You may need to microwave in batches depending on your microwave's power and the number of cookies.
- Quickly top each marshmallow with a remaining cookie to create a sandwich.
- Melt 6 ounces of your favorite chocolate chips (semi-sweet, milk, white, etc.) in a microwave-safe bowl in 30-second intervals, stirring until smooth. Alternatively, melt over a double boiler.
- Drizzle melted chocolate over the top of the sandwich cookies. Add food coloring to the melted chocolate for extra flair!
- Allow chocolate to cool completely before serving. Store in an airtight container at room temperature.
