How to Make Mexican Tamarind Cooler Agua De Tamarindo

  1. Rinse 1 pound of fresh tamarind pods under cold water.
  2. Remove the outer shells from the tamarind pods. Scrape away any remaining bits of shell under running water.
  3. Place the shelled tamarind pulp into a saucepan with 4 cups of water. Bring to a boil.
  4. Reduce heat and simmer for 3 minutes.
  5. Remove from heat and let cool slightly. Once cool enough to handle, manually remove all the pits from the tamarind pulp.
  6. Place the pitted tamarind pulp in a blender. Add 2 cups of water and blend until smooth.
  7. In a separate pitcher, combine 2 cups of water and 1 cup of sugar (or to taste). Stir until sugar dissolves completely.
  8. Combine the blended tamarind mixture and the sweetened water in a large pitcher. Stir well to combine.
  9. Strain the mixture through a fine-mesh sieve to remove any remaining pulp fibers or shell fragments.
  10. Refrigerate for at least 2 hours to chill thoroughly before serving. Garnish with lime wedges and enjoy!
