How to Make My Friend The Friand

  1. Preheat oven to 200°C (400°F).
  2. Melt 100g (1/2 cup) unsalted butter and let it cool completely.
  3. Grease 10 muffin tin molds (or individual oval baking molds measuring 5 x 10 cm) with 1 tablespoon of the melted butter.
  4. In a large bowl, sift together 100g (1 cup) icing sugar and 75g (¾ cup) all-purpose flour. Add 100g (1 cup) ground almonds and mix well.
  5. Lightly beat 3 large egg whites with a fork. Gently fold into the dry ingredients until just combined.
  6. Add the cooled melted butter and the zest of 1 orange. Mix until well incorporated.
  7. Fill each prepared mold ¾ full with the batter.
  8. Bake on the middle shelf of the oven for 10 minutes.
  9. Rotate the baking tray and bake for another 5-10 minutes, until the tops are golden brown and springy to the touch.
  10. Leave the friands in the tins for 5 minutes to cool slightly before gently unmolding them onto a wire rack.
  11. Dust with icing sugar and serve immediately. Enjoy with fresh cream and strawberries, if desired!
