How to Make Oatmeal Coconut Raspberry Bars

  1. Preheat oven to 375°F (190°C).
  2. Spread 3/4 cup shredded coconut evenly on a baking sheet.
  3. Toast in the middle of the oven, stirring once, until golden brown (about 8 minutes). Let cool completely.
  4. In a food processor, combine 1 1/2 cups all-purpose flour, 3/4 cup packed light brown sugar, 1/4 cup granulated sugar, and 1/4 teaspoon salt. Pulse to combine.
  5. Add 1 cup (2 sticks) unsalted butter, cut into cubes, and blend until a coarse dough forms.
  6. Transfer the dough to a large bowl. Stir in 2 cups rolled oats and the toasted coconut until well combined.
  7. Reserve 3/4 cup of the dough.
  8. Press the remaining dough evenly into the bottom of a greased 13x9 inch baking pan.
  9. Spread 1 cup raspberry jam evenly over the crust.
  10. Crumble the reserved dough evenly over the jam.
  11. Sprinkle with the remaining 3/4 cup untoasted shredded coconut.
  12. Bake in the middle of the oven for 20-25 minutes, or until golden brown.
  13. Let cool completely in the pan on a wire rack.
  14. Loosen the edges of the bars with a sharp knife.
  15. Lift the bars out of the pan in one piece and transfer to a cutting board.
  16. Cut into 24 bars.
