How to Make Pizza Egg Bites

  1. Preheat oven to 350°F (175°C).
  2. Melt 1 tablespoon of butter in a medium skillet over medium heat. Add 1/2 cup chopped onion and sauté until golden brown, about 5 minutes.
  3. Add 1 cup sliced mushrooms and 2 cloves minced garlic to the skillet. Sauté for 1 minute more.
  4. Remove from heat and set aside to cool completely.
  5. In a large bowl, whisk together 8 large eggs, 1/4 cup milk, 1/2 cup shredded mozzarella cheese, 1/4 cup pizza sauce, 1/4 teaspoon dried oregano, 1/4 teaspoon dried basil, salt and pepper to taste.
  6. Gently fold in the cooled onion, mushroom, and garlic mixture.
  7. Lightly grease a 24-cup mini muffin tin.
  8. Spoon the egg mixture evenly into the muffin cups, filling each about ¾ full.
  9. Bake for 25-30 minutes, or until the egg bites are set and lightly golden brown.
  10. Let cool slightly in the muffin tin before removing and serving. Enjoy!
