How to Make Pressure Cooker Porcupines

  1. Brown 1 lb ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. In a large bowl, combine the browned beef with 1 (15 ounce) can of tomato sauce, 1 (15 ounce) can of diced tomatoes (undrained), 1 cup cooked rice, 1/2 cup chopped onion, 1 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/4 teaspoon black pepper, and 1/2 cup shredded cheddar cheese.
  3. Place 1 cup of your favorite pasta sauce in the bottom of your pressure cooker. Add the beef mixture to the pressure cooker and spread evenly.
  4. Top the beef mixture with 12 meatballs (approximately 1.5 inches in diameter).
  5. Secure the lid on the pressure cooker and set it to high pressure for 10 minutes. Allow for a natural pressure release for 5 minutes, then manually release any remaining pressure.
  6. Carefully remove the lid. Garnish with extra cheese and fresh parsley if desired, serve immediately.
