How to Make Bacon Cheesebuger Meatloaf
- Preheat oven to 350°F (175°C).
- In a large bowl, gently combine 2 lbs ground chuck, 1 cup crumbled bacon, 1/2 cup shredded cheddar cheese, 1/2 cup finely chopped onion, 1/4 cup finely chopped green bell pepper, 1/4 cup bread crumbs, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix until just combined; be careful not to overmix.
- In a small bowl, whisk together 1/2 cup ketchup and 2 tablespoons Dijon mustard.
- Stir 1/4 cup of the ketchup mixture into the meat mixture, reserving the remaining for glazing.
- Place 3 slices of bread in the bottom of a 9x5x3 inch loaf pan. This will help absorb excess grease.
- Press the meat mixture into the prepared loaf pan, shaping it evenly.
- Spread the remaining ketchup mixture evenly over the top of the meatloaf.
- Bake for 40 minutes.
- Top with 1/2 cup French fried onions.
- Bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C) and the meat is no longer pink.
