How to Make Sangria Bites

  1. **Make the Simple Syrup:** Combine 3 cups sugar and 3 cups water in a saucepan. Heat over medium-high, stirring until sugar dissolves and mixture boils and clarifies (6-10 minutes). Cool completely; refrigerate.
  2. In a small saucepan, sprinkle gelatin over 1 cup of the cooled simple syrup. Let stand 2 minutes to soften.
  3. Place saucepan over low heat; stir gently until gelatin dissolves completely. Do not boil.
  4. Remove from heat and stir in the wine and brandy. Stir gently for 1 minute.
  5. Pour mixture into an 8-inch glass baking dish. Refrigerate for at least 2 hours, or until firmly set.
  6. Wash and dry the orange. Use a vegetable peeler to remove 2 wide strips of rind.
  7. Carefully scrape away the white pith from the rind strips. Slice the rind into thin (1/2 inch long) strands.
  8. Once set, cut the Sangria jelly into 3/4-inch cubes using a sharp knife.
  9. Carefully remove the cubes from the pan using a rubber spatula or offset spatula.
  10. Garnish each Sangria Bite with a few orange-peel strands before serving and enjoy!
