How to Make Simple Pumpkin Flan

  1. Preheat oven to 325°F (160°C). Place a roasting pan or 9x13 inch baking pan in the oven.
  2. Fill the roasting pan halfway with hot water. This creates a water bath for even cooking.
  3. Prepare a 9x5x3 inch loaf pan. Lightly grease it to prevent sticking.
  4. In a heavy-bottomed 1-quart saucepan, heat 1/2 cup (100g) granulated sugar over medium heat. Swirl the pan occasionally until the sugar melts and turns a deep golden brown caramel. This will take about 5-7 minutes.
  5. Carefully pour the hot caramel into the prepared loaf pan, swirling to coat the bottom evenly. Let it cool slightly to set.
  6. In a large bowl, whisk together 4 large eggs until light and frothy.
  7. Whisk in 3/4 cup (150g) granulated sugar, 1 (12-ounce) can evaporated milk, 1 (15-ounce) can pumpkin puree, 1 teaspoon vanilla extract, 1 teaspoon pumpkin pie spice, and 1/4 teaspoon salt until well combined.
  8. Pour the pumpkin mixture over the caramel in the loaf pan.
  9. Carefully place the loaf pan into the roasting pan in the oven. Pour enough hot water into the roasting pan to come halfway up the sides of the loaf pan.
  10. Bake for 60-70 minutes, or until a knife inserted near the center comes out clean. Baking time may vary depending on your oven.
  11. Remove the loaf pan from the roasting pan and let it cool completely on a wire rack.
  12. Once completely cool, cover and refrigerate for at least 8 hours, or preferably overnight, to allow the flan to set completely.
  13. To serve, run a thin, sharp knife around the edge of the flan to loosen it from the pan.
  14. Invert a serving plate over the loaf pan. Holding both firmly, carefully invert the flan onto the plate.
  15. Lift off the loaf pan, allowing the caramel sauce to drizzle down over the flan.
  16. Serve immediately and enjoy!
