How to Make Sour Cherry Jam

  1. Wash, stem, and pit 4 cups of sour cherries.
  2. Roughly chop the pitted cherries into small pieces.
  3. Combine the chopped cherries and 3 cups of granulated sugar in a large, heavy-bottomed saucepan.
  4. Bring the mixture to a rolling boil over medium-high heat, stirring constantly. Boil hard for 1 minute.
  5. Remove from heat and immediately stir in 1 pouch (1.75 oz) of liquid pectin.
  6. Return to a boil and boil hard for 1 minute, stirring constantly.
  7. Remove from heat and stir in 1 teaspoon of almond extract.
  8. Skim off any foam from the surface.
  9. Ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
  10. Wipe the rims of the jars clean, place lids and rings on the jars, and process in a boiling water bath for 5 minutes (adjust processing time based on your altitude).
  11. Allow the jars to cool completely. You should hear a popping sound as the jars seal. Check seals by pressing down on the center of each lid. If the lid doesn't flex, it's sealed.
