How to Make Sour Cherry Jam
- Wash, stem, and pit 4 cups of sour cherries.
- Roughly chop the pitted cherries into small pieces.

- Skim off any foam from the surface.
- Ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
- Wipe the rims of the jars clean, place lids and rings on the jars, and process in a boiling water bath for 5 minutes (adjust processing time based on your altitude).
- Allow the jars to cool completely. You should hear a popping sound as the jars seal. Check seals by pressing down on the center of each lid. If the lid doesn't flex, it's sealed.
