How to Make Sour Cherry Spoon Sweet

  1. Rinse 1 pound of sour cherries under cold running water in a colander.
  2. Place the rinsed cherries in a medium bowl and add 2 cups of cold water. Let them soak for 2 hours.
  3. Drain the cherries, reserving both the cherries and the soaking liquid separately.
  4. Place the cherries in a heavy-bottomed saucepan.
  5. Sprinkle 1 ¾ cups granulated sugar evenly over the cherries.
  6. Add a pinch of salt and the reserved soaking liquid to the saucepan.
  7. Bring the mixture to a boil over high heat.
