How to Make Spicy Beetroot Relish
- Wash and peel 1kg of beetroot. Grate the beetroot using a food processor (or a box grater – wear disposable gloves to avoid staining your hands!).
- In a medium-sized saucepan, combine the grated beetroot, 200ml apple cider vinegar, 100g honey, 1 tbsp Dijon mustard, 1 tsp ground ginger, 1 tsp ground cinnamon, ½ tsp cayenne pepper (or more, to taste), and a pinch of salt.
- Over medium-high heat, stir the mixture until the honey dissolves completely.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for approximately 1 hour and 45 minutes, or until most of the liquid has evaporated and the beetroot is tender. Stir occasionally to prevent sticking.
- Remove from heat and let cool slightly. Taste and adjust seasoning as needed, adding more salt, pepper, or cayenne for extra spice.
- Once cooled completely, transfer the relish to a sterilized jar, seal tightly, and refrigerate. Enjoy!
