How to Make Strawberry Compote
- In a non-reactive saucepan (stainless steel or enamel-coated is recommended), combine 2 pints (approximately 4 cups) fresh strawberries, 1 cup granulated sugar, and 2 tablespoons of your favorite liqueur (Grand Marnier or Chambord recommended, or omit for a non-alcoholic version).
- Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
- Reduce heat to low and simmer gently for 8-10 minutes, or until the strawberries have softened and released their juices. Stir occasionally to prevent burning.
- Remove from heat and let cool completely. This allows the flavors to meld.
- Once cooled, transfer approximately 2/3 of the compote to a food processor fitted with a metal blade. Puree until completely smooth.
- In a mixing bowl, gently combine the strawberry puree with the remaining 1/3 of the compote (which should still contain chunky strawberries).
- Gently stir to combine. Taste and adjust sweetness if needed.
- Refrigerate for at least 30 minutes before serving to allow flavors to fully develop. Enjoy as a topping for cheesecakes, ice cream, yogurt, or even pancakes!
