How to Make Summer Fruits With Tahini Ganache

  1. Pour 1 cup heavy cream into a medium saucepan. Split 1 vanilla bean lengthwise and add both halves to the cream.
  2. Slowly heat the cream over low heat, stirring occasionally, until it reaches just below the boiling point. Do not boil.
  3. Remove the vanilla bean halves from the cream and reserve the bean for later use. Set aside.
  4. Add 4 ounces of finely chopped dark chocolate, 2 tablespoons of granulated sugar, and 2 tablespoons of tahini to the hot cream. Stir continuously until the chocolate is completely melted and the mixture is smooth and glossy. Remove from heat and set aside.
