- Dissolve 1 teaspoon of tartaric acid (or cream of tartar) in 1/2 cup of water.
- Gently pour the dissolved acid mixture over 4 cups of fresh blackberries in a large bowl.
- Cover the bowl and let the mixture sit at room temperature for 24 hours to allow the berries to macerate.
- After 24 hours, strain the juice through a fine-mesh sieve or cheesecloth, pressing gently on the solids to extract as much juice as possible.
- For each pint (2 cups) of blackberry juice, add 3 cups of granulated sugar. Stir until the sugar is completely dissolved.
