- Preheat your oven to 180°C (Gas Mark 4). Grease and line a 23cm x 33cm (9in x 13in) Swiss roll tin.
- In a large saucepan, melt 100g butter, 100g light brown soft sugar, and 2 tbsp golden syrup over a low heat. Stir continuously until melted and combined.
- Remove from heat and stir in 200g porridge oats, 1 tsp ground cinnamon, 1 tsp baking powder, and a pinch of salt until evenly distributed.
- Mash 3 ripe bananas and add them to the oat mixture. Stir until well combined.
- Pour the mixture into your prepared tin and spread evenly.
- Bake for 20-25 minutes, or until the edges are golden brown and the flapjack feels firm to the touch.
- Let the flapjack cool completely in the tin on a wire rack. Once cooled, use a palette knife to cut into bars.
